At the end of the recipe I’ll tell you what I put on the bed of spuds, jut let me say, this was a totally tasty meal!
okay here's my secret ingredient!
1 head of cauliflower
2 red potatoes
1tbsp cream cheese- use g free if gluten intollerent
1tbsp butter
¼ cup of milk- so that is has the consistency of smooth mashed potato's. I add the milk after I use the mixer a bit so i can tell how much i need.
salt and pepper to taste.
First cut your cauliflower and potato’s in half,. put them in a steam basket in a pot with water and steam them on low/med for approx 30 mins, till soft.
Drain the water, return the cauli and potatos to the pot, add the butter, cream cheese, salt and pepper , mix on low to get out the lumps, add your milk 1 tbsp at a time. Once its the consistency you like, check the flavor and add more salt and pepper if need be.
These spuds would be a great side dish, with meat loaf, baked chicken, etc.
Meat topping-
For this dinner, I made a ground beef dish. It started with sauteed onions, then ground beef and garlic, a can of stewed tomatoes, a large sprig of rosemary, and a large sprig of thyme(thrown into the pot to remove before serving) a dab of liquid bouquet (a gravy, stew, flavor additive- only use this ingredient if you don’t have a gluten allergy) one can of chicken stock, 1/2 a head of chopped savoy cabbage and a decent amount of salt and pepper. Put on a lid and let it simmer for 1 1/2 hours. Take off the lid, and let it reduce on medium heat til the liquid has cooked down. and not watery.
Then in my broiler I had some kale that I cut all the leaves off into bite size pieces, tossed them in olive oil, and sprinkled with salt, tossed some more, and spread it on a cookie sheet, and broil until its crispy..
Now the plate set up-
Scoop a couple of spoonsfuls of the spuds into the center of the plate, then a spoonful of the meat mixture on top of the mashed mix, now top it with a small handful of crunchy kale..
